Skinny potato soup


My soup is adapted from http://www.theyummylife.com/baked_potato_soup_recipe



  • 6 baking potatoes -- cooked & mashed
  • 2/3 cup flour (I used wheat)
  • 6 cups 1 % skim milk
  • 1 cup fat-fat shredded cheddar cheese
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup fat free greek yogurt


  • Directions
Add flour to large pot. Slowly whisk milk into the flour--keep stirring until it's blended. 
Cook over medium heat, stirring frequently, until it starts to thicken (8-10 minutes). 
Add the mashed potatoes, 3/4 cup cheese, salt, and pepper. Stir until the cheese is completely melted.
Stir in the greek yogurt.

  1. I just made this today! IT was super tasty. I grated the cauliflower instead of steaming it and added carrots. Super tasty and worth every bite.
