Sweet Tater Black Bean Burger

I prepared a new recipe I found off of my Pinterest.
Here's a few pictures of my cooking. If you scroll down, you'll see the recipe.

1.5LBS of cubed sweet potatoes:

Black beans (1/2 mashed into paste like and 1/2 semi- mashed):

Quinoa before cooking:
The remainder of the quinoa that I'll use in another recipe later this week:

Hubby and I not too sure about the quinoa (I've never heard of it before this recipe):
Again, not too sure:
Final product- looks delicious:
Packaged them and put them in the freezer for later in the week (don't mind the Christmas container, ha!):

Dessert I brought over to my parents for after dinner tonight- Chocolate covered strawberries and pretzels:
Here's the recipe (great blog):
  • 15oz black beans, drained + rinsed
  • 3c cubed sweet tater, cooked with the skin on [~1.5lbs]
  • 1/2 of medium onion finely chopped onion
  • 2 large garlic cloves, finely minced
  • 1/2c cooked quinoa
  • 6T rolled oats, partially ground
  • 2T sunflower seeds
  • black pepper
  • 1t cumin
  • 1t oregano
  • 1/4t coriander
  • 1t chili powder
  • 1T olive oil
  1. Preheat your oven to 375 once you finish cooking the quinoa and the potatoes.
  2. Mash half of the beans in a bowl until paste-like.
  3. Add in the rest of the beans and give a very light stir/mash to combine.
  4. In a large bowl, mash the sweet tater. Each cube should be mashed, but you don’t want it creamy.
  5. Stir in the salt, pepper, oregano, coriander, chili powder, and olive oil, until combined.
  6. Mix in the onion, garlic, corn, black beans, quinoa, sunflower seeds, and ground oats, until just combined.
  7. Form into balls, between your hands and flatten into 1/2”-3/4” thick patties. This should make 8 patties.
  8. Place on a pan lined with parchment paper [or lightly greased pan] and bake on each side for 15min, flipping once, half-way through.
  9. Remove from oven and serve!
Makes 8 patties. They are 4 WW+ (without the bun).

Mmm...... Monday

Tonight I made "skinny chicken nuggets" from:
http://www.skinnytaste.com/2011/04/healthy-baked-chicken-nuggets.html.
I used the same recipe as she has in her blog, except I added two extra chicken breasts, but didn't add any extra ingredients. Turned out really tasty and it is only 6 WW+ for 1/4th of the chicken nuggets.

*4 large chicken breasts, cut into chunks
*2 tsp olive oil
*6 tbsp whole wheat bread crumbs
*2 tbsp panko
*2 tbsp grated fat free parmesan cheese

Dip in oil and then the breading mix.

Cook at 425 degrees for 8-10 min, turn and cook an additional 4-5 minutes and then they're ready!

I also made my favorite afternoon snack, Roasted Spiced Chickpeas. This specific recipe is from wholeliving.com:
http://www.wholeliving.com/130298/roasted-spiced-chickpeas?czone.
Their recipe calls for 1 can of chickpeas, but I also make a double batch.

*2 cans of chickpeas, drained and rinsed
*1 tbsp of vegetable oil (I used less)
*any type of seasoning you'd like

Drain and rinse chickpeas, toss in vegetable oil and your seasoning of preference. Cook at 425 degrees for about 30-35 minutes, tossing every once in awhile. Just make sure you cook them until they're crunchy, not mushy, and not burnt. I've done all three ways ;)
One WW+ serving size is 1/2 cup equaling 3 WW+
The recipe I posted made about 1 1/2 cups.
Last, but not least, I made this delicious WW+ butter-finger pie this weekend. It makes about 6 servings and it's 3 WW+ a slice. I generally stay away from desserts because they are empty calories, but my husband and I were really craving something on Sunday, so we decided this would be better than going out for something else! Here is the link to this recipe, enjoy!

Sunday night dinner

Pizza is my favorite food. It's so good. Love the crust, the cheese, and everything that it entails. Unfortunately, pizza isn't too friendly when it comes to the "healthy eating" department. So while searching pinterest the other night (obsessed with that site), I found a cauliflower crust pizza that sounded and looked at least half way decent. It's from "recipe girl's" site

Basically what you do is grate 1 1/2 cups of cauliflower and microwave it for 8 minutes. Mix in one egg, 1 cup of fat free mozzarella cheese, oregano, garlic, and onion salt.

Spray a cookie sheet and mold to a thin crust pizza circle. Bake at 450 degrees for 15 minutes. Take the crust out and turn the oven to broil.

Add 1/2 cup of tomato pizza sauce on crust, add 1/4 cup f.f. mozzarella cheese, top with 1/2 cup of drained pineapple chunks and 3 slices of sliced canadian bacon and top with the remainder 1/4 cup of cheese.

Broil for 3-4 minutes and voila, it's ready!
I calculated the weight watcher points plus points, so don't hate me if it's not accurate. :)
The recipe said that it was supposed to make a 9 inch pizza, but it was pretty much a 7 (ish) inch pizza, it looked more like a personal pan pizza, but it was rich enough and the perfect amount for two!
For half of the pizza, I calculated that it was 8 WW+
The final product tasted surprisingly really good and I even got a "that's really good, hunny" from my husband!

I also steamed some eggs for the week. Love having my hard boiled eggs throughout the weeks mornings for breakfast.

Enjoy and comment below if you tried it too! Happy cooking :)
